This was the first soup that I tried this month.
I had some extra ingredients left over (onions, potatoes, garlic, carrots) which prompted me to cook another soup, then another one, then another one, etc. I’ve been binging on soups and stews ever since. I also recently discovered Taste Atlas which has given me a lot of new ideas for recipes.

“Goulash” has that reputation of being 3rd try left overs. There will be “issues” of overcooked vegetables.

Well, I wanted to make some beef chuck but was looking for some flavor other than the mundane pot roast I was already overly familiar with so I searched recipes and found something called Mississippi Pot Roast. Simmer the chuck for 5 hours with a jar of pepperoni, a can of french onion soup, and a Ranch seasoning packet (the dry powder.) It turned out surprisingly good.
