Stuffed Bell Peppers with Ground Turkey Sausage and Cauliflower Rice Recipe

Food Porn July continues with Stuffed Bell Peppers with Ground Turkey Sausage and Cauliflower Rice.

I had a version of this dish last night. I basically cooked the same recipe but substituted ground turkey and shredded cheddar cheese to clear out some space in the fridge. I also used cauliflower rice instead of white rice or brown rice. In my experience, this is one of the better low-carb cutting recipes due to the volume and it had the desired effect when I checked the scale this morning.

My only complaint is that the combination of ground turkey and cauliflower rice is a little on the bland side for me. That’s only because I prefer spicy foods though. Otherwise, it tasted great.

  1. HW, I don’t know if you can find bulk Italian sausage in your area, but it’s definitely not bland like ground turkey or ground chicken.

    You can substitute a breakfast sausage with sage in a pinch. Some hot pepper flakes to taste helps liven up the dish.
